GASTRONOMIC CULTURE AND FOOD SCIENCE

This course combines conferences and field activities exploring scientific and cultural aspects of Italian Cuisine. It approaches aspects of local food culture, food chemistry and preparation techniques. In the end, students will be able to process the role of cultural factors in local gastronomy and the correlations of the chemical food characteristics with some preparation processes.
